OUR RECIPES

Recipe soup with chicken broth and rice noodles for 3 people.

Ingredients:

  • 1 liter of chicken broth
  • 1 clove crushed garlic
  • 200 g rice noodles
  • 3 soft eggs
  • 200 g button mushrooms
  • Two large handfuls of spinach shoots
  • 2 tablespoons fermented miso paste (red paste).
  • 1/2 bunch of chives
  • 1/2 bunch of young onions

Preparation:

  1. Cook the rice noodles according to the package instructions.
  2. Heat the chicken broth with the miso paste and garlic clove. Mix well to dissolve the miso in the broth.
  3. In bowls, divide the cooked noodles.
  4. Add the spinach shoots and mushrooms cut into thin strips.
  5. Pour the hot broth into the bowls fills.
  6. Top with chives, onions and calf eggs, cut into 2.

Butternut risotto recipe for 4 people

Ingredients:

  • 1 liter of chicken broth
  • 300g arborio rice
  • 1 onion
  • 1 butternut
  • 50g Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon butter
  • Salt and pepper

Preparation:

  1. Peel and cut the butternut into cubes.
  2. In a frying pan, heat the olive oil and sauté the onion until translucent.
  3. Add the butternut cubes and cook for about 10 minutes until tender.
  4. Add the arborio rice and stir to coat it well with oil. Cook for 2 minutes.
  5. Add a ladle of chicken broth and stir until the liquid is absorbed. Repeat until rice is cooked (about 20 minutes).
  6. Add the grated Parmesan cheese with a teaspoon of butter (the secret to a creamy risotto) and mix.
  7. Season with salt and pepper to taste.
